Roasted Asparagus with Lemon & Poppy Seed

Lemon Poppy Seed Asparagus

Lemon Poppy Seed Asparagus

Fresh lemon zest and crunchy poppy seeds combine with tender-crisp asparagus in this quick-roasted vegetable dish.  Enjoy alongside grilled meat or chicken. Serves 4

  • 1 bunch asparagus, washed and tough ends trimmed
  • 1 tbsp olive oil
  • zest of 1 lemon
  • salt, pepper
  • ½ tsp poppy seeds

Preheat oven to 425°

Toss asparagus with lemon zest, olive oil, salt and pepper. Spread on baking sheet and roast 10 minutes, turning the stalks after 5 minutes.

Remove from oven and sprinkle poppy seeds over. Toss gently to combine. Serve warm or cold
