Easy Eggplant Sandwiches
These baked rounds are meltingly soft in the centre and can be enjoyed with any topping you like to make a tasty sandwich. Or eat them like this, as a side dish. Makes enough rounds for 4 sandwiches.
- 1 eggplant
- 1 tbsp. vegetable oil
- Toast or crusty buns
- Assorted toppings (see below)
Heat oven to 400.
Slice eggplant into ¼ inch rounds (you should get about 12 pieces from one eggplant).
Pour vegetable oil onto baking tray and, using your fingers, spread it around to cover most of the tray. Arrange eggplant rounds on the oil and turn each piece over 1 or 2 times to be sure a little oil is on each side.
Bake for10 minutes. Turn the pieces over and bake another 10 minutes. Remove from oven and use for sandwiches.
Mix and match what you have or what you like.

- Cheese (sliced cheese or cream cheese)
