Tomato-Peach Salad with Blue Cheese

Tomato & Peach Salad with Gorgonzola

Tomato & Peach Salad with Gorgonzola

  • 2 medium peaches (or nectarines)
  • 2 medium tomatoes
  • ¼ cup finely sliced red onion
  • 50 g (approx. ½ cup) blue cheese, cut in small pieces
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • pinch of each salt, pepper

Slice peaches into thick slices, approx. 12 slices from each fruit. Cut tomatoes into thick wedges. Combine all ingredients, except the cheese and toss gently to combine the dressing & and coat the fruits. Let sit at room temperature for 30 minutes. Sprinkle cheese over salad and toss gently before serving. Serves 4.
