Strawberry Quinoa Salad with Feta and Mint
Summer strawberries, soft cheese and fresh mint added to quinoa make this fresh salad as easy to prepare as it is to enjoy. Serve as part of a simple lunch, alongside cold sandwiches or grilled burgers. Serves 4 as a side dish.
- 1 cup water
- ½ cup quinoa
- 1 ½ cup strawberries, washed, trimmed and sliced
- ½ cup crumbled or roughly chopped feta cheese
- ¼ cup fresh mint leaves, sliced thinly
- 1 tbsp. + 1 tsp. olive oil
- 1 tbsp. lemon juice
- ½ tsp. brown sugar
Bring the water to a boil in a small pot. Add the quinoa, stir, cover and reduce to low heat. Cook, covered, 15 minutes. Once cooked, leave in the pot to cool ½ hour, or more.
Combine sliced strawberries, cheese, and mint in a medium bowl.
In a small dish or jar combine oil, lemon juice and brown sugar. Mix well until sugar dissolves.
Add cooked quinoa to bowl with fruit and cheese. Pour dressing over and toss gently to coat salad with dressing.
This salad will keep a couple of days in the fridge, but is best served right away, as the berries will begin to soften after sitting in the dressing.
