Quick Quick Coleslaw
This side dish makes a nice change from green salads. Or try it as a topping on chicken or fish burgers.
- 2 tbsp. plain yogurt
- 2 tbsp. white vinegar (or white wine vinegar)
- ½ tsp. salt
- 1 spring onion, thinly sliced
- 1 small carrot, grated
- 1 250-300g-package coleslaw mix
- 1 handful parsley, chopped
In a medium bowl, combine the first 3 ingredients and mix well with a fork to make a smooth dressing. Add the remaining ingredients and mix well to coat everything in the dressing. Refrigerate 30 minutes (or more). Toss again before serving.
Serves 4-6 as a side dish.
