Arugula Salad with Apricot & Crisp Prosciutto

  • ½ bunch arugula, well washed and torn into 1-2 inch pieces
  • 2 apricots, pitted and sliced
  • 3 slices prosciutto
  • 1 tbsp. + 1 tsp. olive oil
  • 1 tbsp. lemon juice
  • fresh black pepper

Heat a medium-sized frying pan over medium heat; add prosciutto slices and cook, 1 minute per side. Remove from heat and set aside. Prepare the arugula and apricots; put into a salad bowl. Tear prosciutto into small pieces; add to bowl. Dress with oil, lemon juice, and pepper. Toss to coat well. Serves 4.
