Spicy Caribbean Chicken
Use less cayenne for a non-spicy dish, as this chicken will still be very moist and flavourful without the heat. Makes 6 pieces
- 1 garlic clove, chopped
- ¼ tsp. each salt, black pepper
- 1 ½ tsp. cayenne
- 1 tsp. cinnamon
- ½ tsp. each nutmeg, ginger
- ¼ tsp. cloves
- Juice of 1 orange
- 1 tbsp. vegetable oil
- 6 boneless skinless chicken thighs
Combine all ingredients except the chicken and mix well.
Add chicken and turn to coat all pieces. Cover and refrigerate 4-6 hours to marinate. Bake at 375 for 15-20 minutes or until cooked through.
Serve with crunchy salad, fresh fruits and rice.
