Pork Tenderloin with Apples
Tart apples and a touch of sugar make this pork dish tender and flavourful.
- 1 pork tenderloin, approx. 1lb
- 1 Granny Smith or Mutsu apple
- 1 small onion
- 1½ tbsp. brown sugar
- 1-2 tbsp. olive oil
- Salt, pepper
Cut the apple in half, core, then slice into thin strips. Cut the onion in half then slice into thin strips. Combine sliced apple, onion and brown sugar in medium bowl and allow to sit for 2 minutes. Arrange apple and onion mix (with any juices that have accumulated) on baking pan in a rough rectangular shape, but not spread too thinly. Place pork over apple/onion mix; drizzle with olive oil, and sprinkle with salt and pepper. Bake at 350 for 30 minutes. Serves 4.
