Peanut Butter Biscuits with Jam

Peanut Butter Biscuits with Jam

Make these quick tea biscuits for a weekend breakfast, or an afternoon snack. Use your favourite jam. (makes 6 biscuits)

  • 1 cup self-rising flour
  • ¼ tsp. salt
  • 1 tbsp. butter
  • 2 tbsp. natural peanut butter (smooth)
  • ½ cup milk
  • Jam, for spreading

Mix flour, salt, butter and peanut butter in a medium-sized bowl with a fork or your fingers until butters blend with flour to make a coarse texture like brown sugar.  Some larger lumps are ok.

Add milk and mix just until combined.

Dividing the dough into 6 portions, drop by spoonfuls into muffin tins or onto a baking sheet (in mounds).

Bake at 425° for 8 minutes.

Cut each biscuit in half and spread with jam.
